we are moving... to 159 ross street

In life, if you aren't scared shitless every once in a while, you are doing it wrong. In business, if you are not progressing, you are doing it wrong. Our new adventure is a little bit of both. 

We are moving! We love St.Thomas and the unbelievable outpouring of support for our business and can't wait to move into our permanent location. We will be at our current location, 481 Talbot Street (rear unit, on Hiawatha Street), until the end of the December. We will be spending 5-6 weeks doing renovations and getting the space ready to serve customers better. With plans to open February 10th, we hope to stay close to our schedule and make that happen. During these weeks, we will not be taking custom orders or new retail accounts. 

Once we are in the new space, we will be open more days of the week. Days and hours of operation are still to be determined. We will be adding products to cafes and retailers within the region, expanding our product line, launching our online store with Canada wide shipping, and are looking to host events. 

Many details are still being finalized in this large undertaking, so we will do our best to keep our customers informed on our progress. We welcome any questions, comments, or suggests. 2017 holiday pack

This holiday season we are celebrating with all the flavours we know and love around Christmas time. All our chocolates are hand painting and in a shell of 70% dark chocolate.

Hot Chocolate - Soft vanilla marshmallow with a 70% dark chocolate ganache

Candy Cane - 68% Dark chocolate and mint ganache paired with a cashew praline studded with bits of candy cane

Caramel Macchiato - Coffee infused ganache using Las Chicas Del Cafe yellow catuai bean and caramelized white chocolate

Fireball whiskey - One of our favourite boozy flavours, this chocolate is a hit of fireball whiskey with a 64% dark chocolate fireball ganache

Gingerbread - A 70% dark chocolate ganache topped with a milk chocolate praline filled with gingerbread cookie crumbs - *contains gluten

Red Wine Cherry - Our award winning chocolate gets a face lift. Cherry jelly spiked with holiday bitters and red wine milk chocolate ganache

Winning Silver at the Canadian National Competition

We are so excited to announce that our Red Wine Cherry chocolate won a silver medal at the Canadian National Competition of the International Chocolate Awards. This year, we submitted four items. All our entries made it in as finalists for judging before the grand jury, with these bonbons taking home a medal. 

We are so proud to have this chocolate qualify for the International Chocolate Awards, taking place in London, England. Due to shipping issues, our submission never made it to the competition. This is just driving us to work hard over the next year developing new recipes, flavour combinations, and designs.

Do you love chocolate and beer? Great news! We have partnered with Railway City Brewing Co. to create a chocolate box specially designed for the beer lovers out there. The pack includes 4 bon bon style chocolates paired with their well know beers. The Witty Traveller, Bourbon Coffee Stout, Orange Creamsic Ale, and Black Coal Stout are the base of white, milk, and dark chocolate ganaches. Available in 4 piece and 12 piece boxes. The Brewery is also carrying 6 piece boxes of our Hometown pack. Just one more great reason to stop by, have a beer, and enjoy the sweet smell of hops in the air. Be sure to drop in on a Friday or Saturday night to grab a mouthwatering wood fire oven pizza made by Elgin Harvest. Railway City Brewing Co. is located at 130 Edward Street in St.Thomas.

Hometown Pack 

We love local!

We have collaborated with some of our favourite businesses around our hometown of St.Thomas to bring you our next pack. Celebrating some of the amazing things grown and crafted in our area.

All chocolates in the pack are hand painted with coloured cocoa butter and cast with a 70% dark chocolate shell. The designs are focused on lines and patterns, with a colour palette being inspired by the circus, a tribute to Jumbo. 

Railway City Brewing Co. - Using their award winning Black Coal Stout, this chocolate pairs the richness of the brew with the sweetness of milk chocolate to create a smooth ganache. 

Wildflowers Honey - With a focus on it's natural sweetness, this chocolate ganache is started with a touch of raw honey from Wildflowers Farm and matched with a caramelized milk chocolate.

Las Chicas Del Cafe - Two layers of ganache, one white chocolate and one dark chocolate with coffee using their Bourbon Continental roast, create the latte. Much like the one served across the street from the Roastery at their cafe, Streamliners Espresso Bar. 

Bake Shop Studio - Red Velvet. A staple and signature flavour at their shop. This ganache is a blend of white and dark chocolates, with a hint of vanilla, and finished with cream cheese. 

Wildflowers Tea - Organic rose petals are matched with a 68% dark chocolate to create a floral and earthy ganache. Finish with a rose infused honey, also from Wildflower Farm.

Jumbo - Capturing the flavour of an elephant's favourite treat (or so we are told), peanuts, comes together with a classic circus tradition, caramel, for a treat any elephant would cross the tracks for.

Pastries in Streamliners espresso bar

You can now get Seed Confections everyday! Currently, our shop is only open on Saturdays, but we have a selection of pastry items now available at the newly opened Streamliners Espresso Bar, located at 767 Talbot street, St.Thomas. Macarons, chocolate chip cookies, and gluten free chocolate chip cookies are in stock now, with new items in development and making a debut soon.
